The 2017 specification lists seven 18 × 26 × 1-inch sheet pans, with two wire shelves and one rib rack as standard equipment. Pan capacity and supplied shelf count are different things.
Check the exact supports, additional shelves and loaded food height for the arrangement you will use. Eleven pan positions are not eleven fully loaded shelves.
Exterior height uses the standard 3½-inch casters. Interior dimensions describe the chamber, not guaranteed usable space around loaded food.

Place and check the probe
Follow the supplied manual for positioning and checks. A probe-driven finish is useful only when the reading represents the food you intend to monitor.
Choose the smoking interval
The smoke timer controls the wood-chip heating interval. Keep that setting separate from the time or probe condition that ends cooking.
The 767-SK Classic automatically changes to holding after a set time. Choose it when that timing matches your process and a probe-triggered finish is unnecessary.

The Classic does not use a food-probe target to trigger holding. Confirm the electrical version and loading arrangement.
Confirm 1000-SK/III on the unit and its documents, including the working food probe and supplied accessories. Do not substitute a current 1000-SK specification for this controller.
Electrical version and connection
The linked offer was identified as 208/240V; the original specification lists single phase, 60Hz. Have the installer match the actual nameplate and confirm cable, plug and connection requirements.
